Campana Family Salads - Roasted Pepper Salad

Yields 4 servings.


  • 2 cups roasted yellow peppers
  • 2 cups roasted red peppers
  • 4 Tablespoons Olive oil
  • 2 Tablespoons Garlic, minced
  • 4 Tablespoons Parsley Flakes
  • Sea Salt and Pepper (to taste)
  • 2 Tablespoons Capers, rinsed
  • 2 teaspoons Balsamic vinegar (optional)


  1. In a skillet, add the oil, garlic, and peppers and saute over low heat for about 5 minutes. Add half the parsley and salt and pepper to taste. Remove from the heat and add the capers. If you want added sharpness, add the vinegar. Cool and season to taste with salt and pepper. Garnish with parsley flakes.
